I'm excited to be back with another monthly Recipe Challenge hosted by Kim Six Fix. This is a bi-monthly challenge where we are given an ingredient to work with and are asked to create our own recipe. Our theme for this month's challenge was strawberries!! Anything that included strawberries, whether it was a dessert, a salad, an entree, beverage, or a side.
In my opinion, you can never have enough strawberries! I love them and enjoy them year round, but summer strawberries (especially those you pick yourself) are simply the best!
When thinking through what I was going to make, I came across a watermelon salad that I had made before and knew was a hit. With a few tweaks, I decided it would be just as tasty with strawberries, so that's what I did!
RECIPE: Strawberry Onion Feta Salad
INGREDIENTS
4 cups Strawberries chopped
1 (8oz) package of Feta, crumbled
10 Mint Leaves, torn
1 Tablespoon Lemon Juice
1 Teaspoon Salt
1 Teaspoon Pepper
1 Small Sweet Onion, chopped
Handful of Shaved Almonds (optional)
INSTRUCTIONS
This is a super easy recipe since all you have to do is chop and mix! Serve chilled as a side to your grilled meat. I love the mix of onion along with the sweetness of the strawberries. Adding the optional shaved almonds gives it a little crunch.

This salad looks great. I love the sweetness from the strawberries combined with savory onions (which I love) and pungent feta (which I also love). Have to try it!
