What You'll Need

Serves 4–6

  • 5 cups seedless watermelon, cut into chunks – approximately half a medium watermelon
  • 1 large cucumber, peeled and cut into chunks
  • ¼ cup / 60ml fresh lime juice – about 2-3 limes
  • 2 tablespoons runny honey
  • ⅔ cup / 150ml CH Vodka – or a good quality smooth vodka of your choice
  • Plenty of ice
  • To garnish: thin slices of watermelon, cucumber rounds, or lime wedges, or all three

A note on the watermelon: Seedless watermelon is much easier to work with here. If you can only find seeded, just remove as many seeds as possible before blending, any remaining will be caught by the sieve.

How to Make Watermelon and Cucumber Vodka Cocktails

Step 1: Make the Watermelon Juice

Add your watermelon chunks to the blender and blend on high until completely smooth. Pour the blended watermelon through your fine mesh sieve into a large bowl, pressing with the back of a spoon to extract as much juice as possible. Discard the pulp. You should be left with a beautifully clear, vibrant pink juice.

Depending on the ripeness of your watermelon, you'll get varying amounts of juice, a very ripe watermelon will give you considerably more than an underripe one. The riper, the better for both flavour and yield.

Step 2: Make the Cucumber Juice

Rinse out the blender, then add your peeled cucumber chunks and blend until smooth. Pass through the sieve in the same way, pressing firmly to extract the juice. Add the cucumber juice to the watermelon juice and stir to combine. The colour at this point will be a gorgeous pale pink-green.

Step 3: Add the Lime and Honey

In a small bowl or jug, stir together the fresh lime juice and honey until the honey has fully dissolved into the lime juice. This step is worth doing separately, if you add the honey directly to the cold juice it can be harder to incorporate evenly. Add the lime and honey mixture to your juices and stir well.

Taste at this point and adjust if needed. More honey if you want it a little sweeter, more lime if you prefer something sharper and more citrus-forward.

Step 4: Add the Vodka

Pour in the CH Vodka and stir everything together thoroughly. Taste one more time, this is your chance to adjust the balance before serving.

Step 5: Serve

Fill your glasses generously with ice. Pour the cocktail mixture over the ice and garnish with a thin slice of watermelon, a cucumber round, and a wedge of lime. Serve immediately.

For a party, make the juice mixture ahead of time and keep it in the fridge, then simply add the vodka and pour over ice when your guests arrive.

Tips for the Perfect Watermelon Cucumber Cocktail

Use the ripest watermelon you can find. The flavour of the finished cocktail is almost entirely dependent on the quality of your watermelon. A deep red, sweet, ripe melon will give you something extraordinary. A pale, slightly bland one will give you a much less interesting result. Taste before you blend.

Chill everything in advance. For the best result, make the juice mixture a few hours ahead and refrigerate it. Cold juice over ice means a properly chilled cocktail rather than a lukewarm one.

Don't skip the sieving step. You could technically serve this without straining, but the texture would be more like a smoothie than a cocktail. Taking the time to press it through a sieve gives you a clean, elegant drink that looks and feels genuinely special.

Make it a pitcher drink. This recipe scales up beautifully. Double or triple the quantities, make it in advance, and serve from a large pitcher or drinks dispenser at your next gathering. It looks stunning on a table and guests can help themselves.

Adjust the vodka to taste. The recipe as written gives a pleasantly boozy but balanced cocktail. If you're serving to a crowd who prefer something lighter, you can reduce the vodka slightly without losing any of the flavour.


Make It Your Own

Add fresh mint. A small handful of fresh mint blended with the cucumber adds a lovely herbal freshness that works beautifully with both the watermelon and the lime.
