I'm excited to be part of this years Cookie Swap Blog Hop! If you are new here, welcome! I have 3 kids who love the holidays and one of their favorite things to do with me is bake! We usually do a big baking day before Christmas and then do a delivery to a local nursing home. It's a wonderful family tradition that we look forward to each year. It's a pleasure for me as a mom to see my kids doing something to bring joy to others!
Today I'm going to show you a recipe for a Vanilla Scone Cookie. These are perfect for the holidays, but are also a great cookie for any time of the year!
Seeds from half a vanilla bean, scraped ( I did not have these, so I didn't add them)
DIRECTIONS:
Preheat oven to 350 degrees.
In a large bowl with a hand mixer, beat together the butter and sugar for about three minutes, until fluffy. Add the egg and vanilla extract and beat until smooth.
In a medium bowl, whisk together the flour, baking powder, and salt.
Turn the power to low and mix in the flour mixture just until the dough comes together.
Scoop tablespoonfuls of dough and gently roll them into rounds in your hand. Lay them on the cookie sheet, about two inches apart, and press down slightly.
Bake for about 12 minutes until the cookies just begin to turn golden around the edges. Remove cookies from the oven and let sit for about two minutes, then move them to a wire rack and let cool completely.
Make the glaze. In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and vanilla bean seeds until smooth.
Drizzle glaze over the cookies until each is fully coated. Place a paper towel under the wire racks for easy clean up.
Have you tried the Vanilla Scones at Starbucks? These remind me of those. They are thicker than a traditional cookie and the vanilla is just subtle enough not to overwhelm you! So yummy. Perfect with a cup of Hot Cocoa or Coffee!
