Lazy Day Cookie Bars

Lazy Day Cookie Bars are the perfect mix of cake and cookies!  

I hope everyone had a great weekend!  Did you get some ice cream yesterday for National Ice Cream Day? We visited our local Graeter's for my favorite, Black Raspberry Chip.  Graeters is by far the best ice cream in town and all of their flavors are super creamy and stocked full of huge chunks of chocolate. Yum!!

Well, I have a great recipe today that would be perfect with a scoop of your favorite!

It's not a cake, it's not a cookie. It's a delicious mix between the two. Lazy Day Cookie Bars are thick, chewy cookie squares that take only 4 ingredients to make. Next time you need to throw together a quick dessert, I know you'll be reaching for this recipe. It's so simple you'll want to make it over and over.  I first saw this recipe at Normal Cooking.

How to Make Lazy Day Cookie Bars

Ingredients

  • 1 box yellow or white cake mix
  • 2 eggs beaten
  • 5 Tbsp melted butter
  • 2 cups M&M's or mini chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix together all ingredients and spread into a greased 9×13 pan.
  3. Bake for 20 minutes.

    Those cookies look great! By the way, I love your countertops! I know it has nothing to do with the post, BUT they’re beautiful! Are they granite? We are remodeling our kitchen and we ran out of money, so we are going with cheap formica counters. Maybe in a few years we can get the “real thing”. Have a great day!

      Thanks Danielle! They are granite. I have really been happy with them. They hid crumbs and are no maintenance. Definitely the nicest part of our kitchen. I want to ditch my cabinets 🙂

    Very easy-peasy, but in my house I have to substitute for the eggs and use completely guaranteed free of peanut chocolate chips. I will have to try this out with my allergy substitutions and pingback to you at some point.
