Potato or Potatoe? I’ve never really known the answer to that, but I’ll tell you the one thing I know for sure and that is that potatoes are awesome! I like them baked, fried, mashed, or any way in between. Who’s with me?
Loaded, you say? Yep. Carbs are a weakness of mine especially in the winter. There’s something about cold weather that makes you want to eat a big plate of pasta or in this case, a big bowl of potato soup!
You are going to LOVE today’s recipe! With my crazy potato obsession, I’ve tried numerous potato soup recipes and I can confidently tell you this one is the BEST!
Run, don’t walk and get these ingredients. Your family will thank you!
Loaded Baked Potato Soup
1 1/2 cups Chopped Onion
6 cups Chicken Broth
2 pds Baking Potatoes, peeled and cubed
2/3 cup Butter
3/4 cup Flour
4 cups Milk
1 tsp Salt
1 tsp Pepper
1 cup Diced Cooked Ham
1- 8oz container Sour Cream
2 1/2 cups shredded Sharp Cheddar
Green Onions to taste ( I skipped these)
1. In a large skillet, cook bacon, crumble and set aside. Cook onion until tender (roughly 6 minutes) in bacon drippings.
2. In a pot, boil chicken broth, diced potatoes, and onion. Heat until boiling and reduce heat. Cook until potatoes are tender.
3. Back to your skillet, melt butter and whisk in flour until smooth. Add in milk gradually, stirring constantly. Next, add sour cream, cheese, ham, bacon, and salt and pepper. Continue stirring and heat until bubbly.
4. Add mixture to your pot of potatoes and stir and heat until thick and boiling.
It is creamy, rich, and thick with chunks of soft potatoes, cheese, ham and bacon.
