Today's recipe is a fun, easy dinner to prepare for your family. A local favorite is Skyline Chili or Gold Star Chili. This chili is sweeter and not as meaty as a typical chili that you think of. It is served either over hotdogs or noodles. We are able to get cans of this “special” chili here in our local grocers and I was looking for a way to mix it up and make a family meal.
I am calling this Chili Mac. If you don't have access to our Cincinnati chili, you could substitute another kind.
I first started by sauteing an onion with a little olive oil.
Next, I added ground beef.
Chili powder (about 1 tbsp) and cayenne pepper (1tsp) give it a zing.
Drain the beef and then add your can of chili. Heat until bubbling.
Boil your pasta and drain.
Combine all in a casserole dish and top with shredded cheese. I used cheddar and mozzarella.
Bake at 325 for 20 minutes or until cheese is melted.
Top with sour cream.
If my kids eat it, then it is a success and this one definitely hit the mark.
Do you love Cincinnati chili? Have you had it before? I hear you either love it or hate it. It's unique and our family loves it,
Most Sundays, once the house has gone quiet and it's edging towards nine, a letter goes out. It's the one I'd write to a friend with good taste and not nearly enough time: one thing worth reading, one thing worth buying, and one thing to skip. No noise, no pressure to spend, just the considered version of what I've actually been using, loving, or quietly sending back.
If you like the sort of recommendation that still holds up six months later, leave your email below and I'll write to you on Sunday.
I was stationed at Wright-Patt AFB. I would drive to Cinnci to visit family. I love, love Skyline Chili. Wish we had it here in Texas!!
Hi Sonya! It’s always nice meeting a Cincy Chili lover! It’s something people either love or hate! I am definitely a lover.
